What to do on Gap Year?

DD is taking a gap year before university. She's spending the summer working. She is then planning to spend time in 2 European countries. Because of post-Brexit rules, she can't spend any more time in the EU/Schengen countries. So she'd like to spend a month, maybe 6 weeks, in a non-European country. She is only 17, which means that there are some things she won't be able to do.
Does anyone have any suggestions? I'm obviously a little concerned about her safety, and would like her to enjoy the time. She's happy to do voluntary work. It would be nice not to have complex visa issues to deal with. Thanks to anyone who can come up with a practical idea!

Also I know it might be seen as 'boring' as its close to home but I think the maximum days rules doesn't apply in Ireland

Thank you. She can't do the American summer camp thing as she'll be working in the UK next summer. She needs to find something for this Autumn while still 17 - next year is pretty much planned for. I'm not sure what doing an internship with a UK company while travelling would consist of? I doubt she'd add much value!
I'm aware of the Irish option, but she was hoping for something a bit less similar to home!

Costa Rica Google Dreamsea Surf Camp (she doesn't need to know about surfing). There are voluntary positions there. DS did this in covid gap year for 3 weeks and then spent 6 months in Costa Rica, Guatemala and Mexico.

The reviews are very mixed, tbh. It's not clear how they make their money, as according to some reviews they have almost no guests, but lots of volunteers.
