What meals are you making in this weather?

Literally can’t think of one thing I fancy doing for family meals this week. Need a bit of inspiration please.

Tonight is M&S BBQ - we have guests (minus one, who has covid), so it's quick, easy and conducive to the weather.
We had burgers and fries, burgers done on the barbie yesterday.
Day before that was honey soy marinaded steak, with new potatoes, lettuce salad, and corn on the cob.
Also on the menu is oven baked salmon, with new potatoes, asparagus, beans and baby carrots.
And I've fallen in love with mint cornettos.

The easy default during weather like this, for us, is salad. Usually with something , so I'll often look at the variety of bbq foods eg Chinese chicken thighs and just cook it in the oven.

I've got into a rut with salad and tend to do the same old ... but I've just been looking at the ' what do you put in your salad' thread and got some great ideas to jazz it up a bit.

Salad and something to go with it. My kitchen is like an inferno in this weather with the oven or hob on. Really need to look into an awning to keep the sun out of it. I avoid it totally and cook anything that needs to be cooked on the bbq.

We are having
Chorizo, halloumi, red onion and tomato salad with rocket and spinach
Greek salad - feta, olives, tomato, cucumber, cos lettuce
Garlic chicken salad - grilled garlic chicken, grilled peppers, butter lettuce, tomato, spring onion, croutons
Thai glass noodle salad with steak - lime and chilli marinated steak, shredded iceberg, shredded carrot, fine green beans, tossed in soy, chilli, rice wine vinegar and ixed through soaked noodles

The heat doesn't affect what I eat. I could quite happily eat a stew or a roast dinner in this weather.

I'm having pizza tonight.

Well I planned my meals for this week based on our schedule, which is busy, rather than the weather, so we are eating meals from the freezer. Risotto tonight and spag bol tomorrow. They don't sound like great meals for this weather but the advantage is that I won't need to spend time cooking in a hot kitchen - tonight's can be heated in the microwave and served with salad if I don't fancy boiling veg.

The slow cooker is actually really handy when it's warm... doesn't heat up the kitchen and just needs an occasional stir... so chilli with micro rice, roast chicken with salad or chunky soup and crusty bread etc... fresh filled pasta is a great quick meal, or fritatta or quiche... baby potatoes can be cooked earlier in the day then reheated for a couple of minutes in the microwave later... I like tenderstem brocoli or asparagus as it can be clinged and pinged for a few minutes

Last night we had frittata and salad. Tonight we'll be having chicken thighs with watermelon and feta salad. Tomorrow the plan is pressure cooker risotto, and the following day arancini (made using leftover risotto) with salad.

Yesterday was salade Nicoise.
Tonight, probably soy marinade for salmon
Grilled peach, prosciutto and mozzarella salad with mint
Walnut, pear and goats cheese

Salad. Many salads.
Halloumi and watermelon tomorrow, smoked mackerel salad the day after, quiche (pre-bought) and salad another night. I'm going to make some gazpacho for the first time this week too.

Caribbean chicken in a pita with salad
Salmon with salad and rice
Bulgar wheat with mint, feta and loads of veg

Just stuff that doesn't need oven as my lounge is a sauna

I've basically adopted Mediterranean keto just because my appetite for stodgy carbs has melted away with the weather.

Mostly fish or eggs as the main protein with the occasional bit of chicken or steak, cooked in plenty of olive oil.

Then salad. Iceberg lettuce, cherry tomatoes, red cabbage, peppers, cucumber etc. If dinner is late enough that the house is cooled down I'll do broccoli or garlic mushrooms.

Seriously well insulated newbuild with a house cat so the struggle is real 🫠😫.

On the plus side the winter 10lbs has fallen off me, I feel more energetic and my skin has never looked better so I'm considering sticking to it 😅

Actually, the heat doesn't affect me my appetite at all. I was just making panna cotta right now, fancied something sweet and cool, using hob, sweating.
I haven't decided what I would cook, but maybe something chicken, Southeast Asian curry, maybe.

We're on holiday so no inclination to cook. So salads and cold cuts, caprese and panzanella. Lovely bread and cheese.

I like things that you boil 10 minutes and let cook in their own steam, so rice salad, potato salad, bulgur and grains with chopped up vegetables, hard boiled eggs, tuna etc.

Then whatever fruit catches my eye, especially watermelon.

I might push the boat out and make zucchine fritters, a paella or a peperonata (cute white bell peppers are a speciality here).

But when I’m at home things are similar. Maybe more pulses (love chickpeas) done in the pressure cooker. And less ice cream…

Sorry to hijack your thread but I feel it's vital to recommend Tesco mint cornetto rip offs. They're far superior to Walls Cornetto, imo, they have this well of chocolatey minty sauce in the middle of the ice cream and then about an inch and a half of sold chocolate at the bottom of the cone.
Absolutely elite.

Tonight will be poached salmon with pesto/pasta
