Meals this weekend?

The DCs are currently eating fish and chips.

Tonight I will make pancakes stuffed with chicken and veg in a white sauce with a salad.

Tomorrow we were meant to go swimming which always means McDonalds afterwards but the pool is closed for maintenance. So we might try for the cinema and pizza hut, then a supper- eggs on toast etc.

At some point I have a cake to bake and some bread to make using my shiny new breadmaker. :)

Home made Kebabs roasted veg and salad tonight. Not sure about tomorrow yet as we're meeting family for lunch out.

Tonight we're having M&S BBQ, and tomorrow night, takeout for Father's Day.

And we're going to make hokey pokey ice cream.

Tonight we have linguine with prawns, garlic, chilli, cherry tomatoes and plenty of fresh parsley. Served with a green salad. Or variations of (tomatoes picked out, prawns with salad.)

Tomorrow for Father's Day I'm doing roast gammon with crushed pineapple and chilli. Served with roasted, smashed potatoes, green salad, homemade apple slaw and a chopped Mexican corn salad.

Morning! I made a vanilla and peach cake by virtue of buying a vanilla cake packet mix and using peach syrup in place of water and putting tinned peaches on the top. It tastes amazing even if I say so myself!

Tonight I will make vegetarian DH a tart with pesto, roasted peppers and black olives with salads on the side. The DCs and I will have a chicken and leek lattice tart with salads.

I have not yet broken the breadmaker out. It is sitting on my table looking at me........

Saturday: Breakfast for dinner
Sunday: Youngest kids have won McDonalds vouchers and want to spend them. The rest of us are having Lebanese lentil soup.

Sure thing - but it's one I make a lot so it's a bit different every time.

Heat some oil.
Add diced onion, garlic, cumin powder and turmeric. Fry for 5 mins or so.
Add your (well rinsed) red lentils and stir into the oil.
Add stock (roughly 1 cup lentils to 4 cups of stock - less if you want it thicker but I prefer this soup not too thick) and simmer for 10 or 15 mins.
Add diced carrot and celery. Simmer for 5 - 10 mins.
Take off the heat.

Use a stick blender to mostly blend it - doesn't need to be perfect.
Add a good amount of freshly squeezed lemon juice and stir in some fresh chopped coriander.

It's a family favourite.
