Potatoes turning grey after they have been cooked.

Is anyone else experiencing this?
In the last few weeks, I’ve purchased new potato to have cold with salads or make into potato salad but as soon as they have cooled down they turn a very unappetising grey.
I have never experienced this before so not sure if it is the potatoes or something I’m doing.
It such a waste, I end up chucking them which I can’t really afford to do.

I think it's the starch. A little bit of lemon juice in the water is supposed to prevent it. Also be careful not over cook them.

It’s starch - this has always happened with certain types of potato but does with other food too ie apple, avocado.

Theyre fine to eat!!
