In a rut with veggie meals, what’s your family’s favourite meat free meals?

As above, we are a family of 5, two of which are vegetarian. DH and I tend to cook more meat at the weekend but predominantly stick to meat free for ease during the week.

I just feel we eat the the same things all the time on rotation, quorn Bolognese, chickpea and veg enchiladas, pizza, veg curry SO MUCH pasta!!!

what meat free meals have you found have gone down well and are a family favourite.

(p.s we all eat fish)

Have you got a good recipe for paneer curry? Would love to know it, if so!

@numberthirtytwowindsorgardens I love paneer, and if there's a curry recipe you already have it would probably work in there too. Here are two of my favourites at the moment.
Palak paneer - this is a drier dish and with the just wilted spinach it feels light and fresh and healthy, but still delicious. This is one of my favourite midweek curries.
Butter paneer masala - as the name suggests this is a very indulgent, but delightful curry. It's so rich and beautifully spiced.

@numberthirtytwowindsorgardens We use the Mattar Paneer recipe from the Dishoom cookbook. It’s really good and super easy. I’ve also made it with tofu.

Marking place - some great suggestions!! Aubergine miso on sticky rice is always lovely topped with spring onions and fried dried crunchy onions (the ones you get in tubs)

Veggie for almost 30 years now and it can't get repetitive at times but then I remember some of the recipes I havent done for months!

Crispy baked tofu, served with rice and cucumber salad - dressed with a little sesame oil, salt and toasted sesame seeds.

New easy quick one I’ve just discovered:

noodles, chucked in a wok with pak choi and tenderstem broccoli. Add garlic, tahini and soy sauce. Done.

easy to mess around with, add a few chilli flakes, tofu, whatever’s in.

Just place-marking and very similar to you OP with being in a definite rut. DH is vegan and we mostly are now too although we did have a quick Tuna, sweetcorn , tomatoe sauce and pasta for me and my DD’s. Need inspiration too. Just got Happy Vegan Food by Bettina Campolucci Birdie from the library the other day so hope I find something in there, will report back!

Chickpea curry (where the sauce base is coconut milk)
I always make this when we have ‘end of the week’ veggies to use up, I literally throw everything in it. Delicious.

Roasted veg like red pepper, courgette, aubergine, red onion etc.
Then sprinkle pine nuts and feta on it and roast for another 10 mins. Usually have this with garlic bread and cous cous.

A Greek mezze type tea, grilled red peppers/aubergine/halloumi on skewers. Warm pitta bread, hummus, olives, savoury rice, Greek salad and some watermelon. It’s abit of a feast & so nice eating it outside on a warm day, feels like you are on holiday.

Reporting back, did not think much of Happy Vegan Food by Bettina’s cook book as sometimes there are so many ingredients and I want simple easy and uncomplicated, so I am now reading Jack Munroe Vegen (Ish) as I think a bit less complicated meal ideas I hope. Will report back again.

This one, www.theguardian.com/food/2021/oct/16/meera-sodha-vegan-recipe-cavolo-nero-fennel-chilli-spelt-walnuts , is really tasty.
Another is a vegetarian Mushroom & Pecan Wellington, Mushrooms 250g, red onion 1, cooked beetroot 130g, garlic 2 cloves, breadcrumbs 50g, butter 25g, pecans 40g, mixed seeds 25g, ricotta 250g, oil, egg 1, salt & pepper, pack of puff pastry. Fry mushrooms, onion, garlic, then off heat add all the other ingredients and wrap in puff pasty sheet, bake 40 mins at gas make6/200 deg C.

Home made pizza- bread dough base and whatever toppings. I don't like ready made pizzas but love this
Also simple pasta dishes- spaghetti with parsley garlic and chilli is very nice and super quick

Last night we had Mediterranean Couscous stuffed peppers topped with feta and mozzarella and baked in the oven. Served it with crusty baguettes which went down well.
Tonight we are making this jambalaya with a green salad thing.
