Alternative Sunday lunch ideas with a roast chicken

I've bought a lovely big chicken from my butcher, but don't fancy doing all the trimmings today and would like something s bit lighter. Can't be a chicken salad as I have a fussy two year old and also a four year old to feed.

I thought maybe roast chicken, cous cous, hummus... but all sounding a bit bland and dry!

Last weekend I roasted a chicken a couple of hours in advance and served it with homemade coleslaw, green salad, hummus, and crudités.

Something else that goes down well with roast chicken is to chop mixed peppers, mushrooms, courgette into pieces about the size of cherry tomatoes, add in a pack of cherry tomatoes whole, drizzle over a little oil and roast the lot together for about half an hour. You can add pancetta, halloumi, baby corn, celery, thick sliced onions depending on who you're serving it to and what they like.

Another vote for chips or wedges with mayo.

Or chop up a load of veg, toss in a little oul, put in a baking tray with the chicken on top, prick the chicken skin all over and sprinkle with lemon juice.

Or do a vegi traybake with tomatoes, aubergine, courgette, new potatoes onions etc these will go well with cous cous

I like to do it in one tray with baby potatoes, garlic cloves & lemon, half way through cooking add radishes in half/quarters depending how big they are. Then about 15 mins before end add a bunch of asparagus cut about 2in long and a bag of spinach.

serve a couple of big spoons of the mixture with chicken on top

delicious and not much washing up

You need an enormous Le Creuset to make the chicken in orzo. I don’t have one big enough and I’m sure most other people don’t either.

Well it isn't Le Creuset, but I have a lidded casserole dish that is big enough to do it. Don't most people? I use it several times a week for different dishes.

I've gone for @Comtesse Sweet and Sour chicken as had all the ingredients in for it, it's ready in about an hour will report back!

It was absolutely delicious- kids and husband loved it too. I'd make it again, and I'm on slimming world too and it was slimming world friendly

We've been eating this a lot - roast chicken shredded or just chopped up with greek style flatbreads heated up (I buy premade), Nandos perinnaise (this is amazing), rice and loads of salad. A really nice summer meal.
