How much garlic?

On the back of two recent threads about How many portions of bolognese or chilli do you get from 450g mince and Do you feed family garlic based dishes without considering the after smell the next day it got me wondering...

how much garlic people would typically use when making chilli or bolognese using 450g of mince?

(I usually use about half a bulb)

Lots! I usually buy frozen (from world foods aisle) and use 3 or 4 chunks

Chilli a fair bit. Bolognese/ Ragù, none, just a soffritto made of onion, carrot and celery. Italians don't use garlic in it ( nor in most other things contrary to popular belief) and as I'm Italy I'm sticking to the rules.

I love garlic but wouldn't put it in either bolognese or chilli.

I use puréed garlic from a tube so everything it goes in is a good squeeze's worth. Some things get more of a squeeze than others depending on what it is. If I'm making garlic bread I'll easily use at least half the tube. Grin

Bolognese sauce (ragù) doesn’t have garlic in it. But peposo gets a whole head (plus black pepper and beef shin). I don’t mind garlic breath!

Yes, yes they do.

And coffee. And meat/dairy.

We should all be consuming just water and then showering ten times and brushing teeth, tongue, trachea and nasal turbinates three times before being permitted to be in public wearing a full respirator getup. And they'd still complain they could smell it.

I've never considered we might smell of garlic....
I use tonnes of the stuff! 3/4/5/6 segments of the garlic. Just depends on how much I can be fucked with chopping. Go through 3 or 4 bulbs a week. It's like onion, goes in everything. We must stick to high heavens... I'm quite sensitive to smell usually!

For reasons of chemistry, if you have meals that are just carb/wheat, fat and garlic, you're far more likely to smell than if you have lots of vegetables, herbs, spices and fruit, not just for one meal, but through the day.

So garlic bread/chicken kiev on a diet that consists of largely beige/bland stuff = stinky.

Tonnes of garlic, loads of veg, meals well spiced and seasoned = not so stinky.

Whe you think you've overdone the garlic, add more.

Also, the later you add it to the cooking process, the stronger the flavour.....

Half a bulb in bolognese but I don't use much in chilli, it's less necessary.

I cook with 500g mince, loads of veggies, 2 tuna tomatoes plus some purée and water too, that's for one adult and 2 dc. Try to have some left over for lunches but isn't always any left if dd2 is on the mood and has seconds (and 3rds)

We use loads of garlic so we get the lazy garlic 🙈. Chuck loads of the stuff in!

None, in an authentic Italian bolognese sauce.
Every grandmother from Bologna cooks a ragu in a different way and they all argue theirs is the best and many of them use garlic.

No such thing as 'authentic' anything, recipes change and evolve over time and within families.

If I'm using garlic about half a bulb, or if being lazy half a tube or 3 or 4 frozen bits.
However sometimes I add garlic, sometimes cba.
Depends on the day and how I'm feeling.

Oooh all of it. Whenever I make roast potatoes I roast one or even two whole bulbs of garlic to sqeeze over them when they're served. It's so good for you and delicious! One or two cloves? Pah!
