Veggie traybake recipes ?

Anyone care to share any fail safe tasty one tin wonders ?
Tonight I'm having squash, red onion in herbs and spices with veggie sausages, apple and at the end some kale chucked in. Very quick honey mustard cider vinegar dressing.

I usually have a stash of veg sausages and meatballs in the freezer. We eat cheese. Want to minimise time prepping/ cooking and washing up. Thanks in advance 🙏

Yes I've heard it's good, trying to get hold of a second hand copy !

How about breaking eggs in to it and baking them?

Aloo go I tray bake. Check par boiled mini potatoes, cauliflower, tomatoes and chick peas in a large bowl. Stir in a carton of yoghurt and a curry paste pot. Spread out on a tray and roast 25 mins. When it’s out of oven garnish with coriander it stir in some baby spinach. Serve with rice.

I make the Bombay potato tray bake quite often. I use a tin of chopped tomatoes instead of fresh and just chop the chilli an grate the ginger instead of blending.

Peppers , onions, tomatoes, Aubergine sweet potato. Roast , then lay a sheet of flaky pastry over it . When cooked , flip over so pastry base , crumble feta and splash with balsamic .
