Ecstatic Because Dinner is Already Done

I cooked cottage pie yesterday and made two. One is in fridge all ready to be heated up this evening. This makes me so happy. As a mum of two small children I often dread having to cook the dinner. I'm a good cook but I'm not fast. It feels like such a slog often with my 26 month whining at my feet. I can't believe what a difference it has made to my mood. What boring things make you happy?

I cook a full dinner every day early in the morning. I haven't cooked dinner in the evening for years now.

Someone else has emptied the dishwasher! Or better yet, a nice coffee and 5 minutes of peace!

I do lots of batch cooking so this week every meal is a get out and defrost one. Monday was a frozen pasta sauce, yesterday was bbq chicken and egg fried rice from the freezer, today is pastry slices and veg and tomorrow spag Bol. I am isolating before an op so it has made life easier for everyone. Plenty left in the freezer for my recovery too.

What boring things make you happy?

Does anyone else feel really smug when both the dishwasher and washing machine are running at the same time? OK, it DOES mean I'll have a whole load of crap to put away later, but for now, the surfaces are clear, the laundry basket is empty and it's the robots' problem.

I love settling down for the evening with the dishwasher on and the washing machine and breadmaker both on programmers set to finish when I get up in the morning. Yes, a very smug feeling Grin

We’ve started having Monday Pie or ‘pasties’ twice a month. I do a roast on Sundays and instead of making up four plates, I make up 6. The contents of those two extra plates (meat, veg, spuds, stuffing and gravy), get mashed/cut/broken up and put in between 2 rounds of (shop bought) pastry for Monday tea. Bung on some peas and dinner is done.

Oh yes. Especially if the sheets have been lined on a sunny and breezy spring or summer day. They smell and feel gorgeous.
