I find myself with 1kg of parsnips. Hit me with your favourite parsnip recipes please!

Parsnip and lemon cake
Parsnip, carrot and goats cheese bake.

Delia Smith has a lovely recipe for parsnip roulade, which is good both hot and cold. Leftovers would freeze well.

I've wanted to make one since trying it but unfortunately I can't get parsnips where I live.
DH was horrified when I came home with some. They are cattle feed! They've only been in the shops for the past 4-5 years, certainly couldn't buy any when I first moved here.
We are going to try out the pasta recipe tomorrow
