The best cheese toastie recipe

I'm very very tempted to go off plan and go out for bread to make a cheese toastie.

I don't usually eat bread for blood sugar and weight reasons. There is no low carb bread here.

If I do, I want to maximise my taste experience 😂 I will have to offset it with all 10k steps on the elliptical trainer today, so it needs to be worth it.

I have a bit of grated mozzerella, so would put a slice of cheddar and mozzarella, chorizo, very very thin onion, very very thin green pepper and tomato to make pizza toasties.

Am I missing a trick somewhere? Is there a better combination? A cheese more suited to toasties?

I think I'm definitely going to the shop today 😂

Not a cheese toastie but these are a family favourite.

Pastrami
Turkey slices
Leerdammer cheese
Mayo
French's yellow mustard
Gherkins
Wholemeal or tiger bread

Assemble, toast, eat!

Grilled cheese is so much better then a Breville/toasted sandwich.

White bread, grated cheese, Worcester sauce if you like it. Butter the bread on both sides, then a bit of oil in a frying pan and fry it, turning over regularly until it's golden brown.

They may well be, but that's not what my mouth wants today 😁

My sandwich toaster does have changeable plates (toastie, waffle and flat) so a flat press could be doable, but I want the triangle.

Can't help you on the cheese front because I'm sitting right now having vegan cheese in mine. But its done in a dry frying pan - buttered on the outside (well - naturli) and Branston Pickle and slices tomatoes inside. Tis delicious.

I used to like those from delice de France. But I'm convinced they pump out a smell and don't even make anything that tastes like that smell. My train used to get in to the platform right next to it on liverpool street station 😫

The best thing I ever had out of there or that ever came close to the smell was a drunken croque monsieur on the last train home 😂😂😂

I decided I can't be bothered to go to the shop for bread I shouldn't be eating. I found some sandwich thins, gouda slices and plastic cheese slices in the freezer so they are currently defrosting.

As an aside, slice onions very thinly and cook in microwave till just beginning to tinge brown on the edge [it will take longer than you think]
They won't look much but they're sweet with no sharp tang. Lovely in salad and sandwiches etc.
