What do you feed your family in the summer?

I'd happily live off salads but the children won't eat a fancy salad. I'm already bored of chopped fruit and veg with bread and butter and cheese. It feels wrong to be eating spag bol, chilli or curry in this weather.

Kids are 8 and 6 and will eat most veg and most things but nothing to fancy.

Would love to have any recipe recommendations please!

Tbh, we just have our regular meals. We even had sausage and mash on Tuesday Grin. Having a BBQ Sunday when it's very hot though. Definitely need more inspo for 'summer dinners'.

This week we are having:

Buttermilk chicken cutlets with watermelon & watercress salad

Thai coconut chicken thighs braised with cabbage, white rice

Pasta with fresh tomatoes, sweetcorn, courgette and some ricotta dolloped on top with basil

Slow cooked leg of lamb on Sunday with shawarma spices, pickles, flatbreads, tzadziki, cucumber, tomato, and tahini-garlic sauce

My DC who are roughly the same age as yours OP, love a sloppy joe / sloppy guiseppe. Basically either chilli (joe) or bolognaise sauce (guiseppe) on a burger bun. I serve it with cucumber sticks, cherry tomatoes and oven chips with a selection of sauces.
