If you have a big lunch what do you have for dinner?

Having a decent home-cooked lunch with pudding tomorrow and wondering what to make for dinner. If it was just me I wouldn't bother but the dc always seem to want food. I'm trying to stop with the quick fix beans on toast type thing but struggling to think of anything that is quick, easy and healthy.
Any suggestions?

If the dc have a big lunch then I normally do a picnic type tea, cheese and crackers, cucumber , tomatoes, carrot sticks, hummus. Yogurt and fruit after if they are hungry.

I'd have nothing. Dh and I only eat one meal a day, in the evening. I couldn't eat more than once a day. Might have snack type things in the evening when I'm watching telly but that's it. The idea of 3 proper meals a day is strange to me, I don't know how anyone can eat that much.

Omelettes are quick, easy and healthy. You could put a bit of bagged salad and cherry tomatoes on the side if you feel obliged to provide vegetables. If you have a lot of people to feed, you could do a baked version and people just eat what they want and use any leftovers the next day.

But threads like this always bring up a load of weird ideas about food.

A lot of people seem to think that hot food is automatically 'bigger', more filling or more calories than quick snacky stuff like cheese and crackers or sandwiches and crisps when it's often not the case at all.

Big lunch, big dinner, no breakfast. Lunch might be quiche and salad. Dinner would be fish, rice, veg. I eat relatively healthy but a wide wide variety of dishes. I don't consider the calories ever.

Well said @BarbaraofSeville, I eat a cooked dinner and have leftovers for lunch the next day every day. Essentially two dinners a day but I’m getting lots of veg and high protein intake this way.

A salad. Crackers and cheese on the side if people are still hungry. Or left overs from dinner. DC like to just come back for seconds of Sunday lunch on Sunday evening.
