Pickled beetroot - ideas

I adore pickled beetroot and eat it out of the jar with a fork. It’s my Christmas treat!

I also pair it with soft goats cheese (may have just eaten a whole block).

So for purely boredom reasons, can you give me any tasty pickled beetroot combinations I should try with my very large jar

Fresh baguette, Phillip mixed with horseradish and pickled beetroot is delicious.

With any cold or warm salad involving Goat's or feta cheese or halloumi.

With or in place of sauerkraut or pickle to cut through rich foods (cheese on toast, schnitzel, breaded fish, duck, lasagne).

With smoked mackerel on sourdough (optional horseradish and celery/watercress salad)

It’s very good with liver pâté, along with crispy onions and streaky bacon (cooked and left to cool, then cut into small bits), on bread or crackers.
