I haven't slept properly in nearly three weeks, I'm having horrible stress dreams every night. Last night I barely slept at all. Work is annoying.

I decided to have a major comfort dinner, roast chicken, roast potatoes & veg, gravy, the works. I've never had it but someone was talking about it at the weekend, so I decided to make myself cauliflower cheese. I love cauliflower, I love cheese, what could be more perfect?

To get the flour I had to dig through the baking cupboard of doom. Only to find some twatbag probably me had managed to knock over a tin of golden syrup. It was everywhere. So while cooking dinner and doing homework, I had to empty out the cupboard, clean the various tins and jars and find homes for the contents of ruined packets.

Cauliflower cheese is mediocre at best.

Today definitely can fuck off. Same crap here with work, shit bosses, mardy teens, too much stress.

My sleep routine is basically feel tired, switch off light, brain immediately becomes wide awake with worries about the DC and stress about all the hundred and one things at work or having imaginary arguments with my boss where I tell him how crap he is. 🙄🙄🙄

Except for the teens, are you me?

I am exactly the same, laying in bed in the dark thinking about everything on my to do list at work, and the 36 (actual number, not an exaggeration) emails my boss sent me today with more work to do. I stress about when I'll ever have the chance to even read the emails properly let alone do the work.

Then I plan out my letter to HR handing in my notice and calling twatty boss out for everything he's done and said.

I had a call with him today where he asked how I was, I said I was feeling stressed, overwhelmed, it's making me feel ill. His response was to rant at me for an hour about how unfair it is that I'm blaming him for being ill, how I clearly just wanted his job and resent him, how my behaviour is bullying because I'm trying to make him look bad to his boss by not doing the work he sets.

I cried, a lot and now I feel pathetic, sick to my stomach, stressed, tired and generally useless and angry. I HATE HIM!

So sorry everyone. Life is a fucker. So much bloody effort.
Ok, not great with measurements, but
A quarter ish of pack of butter melted, then add enough flour so it’s quite thick. Add milk very very slowly, do NOT get bored and add loads all at once, you will regret it.
Stir stir stir for ages. Don’t stop stirring. Then add lots of cheese, English mustard, salt and mustard.
Be generous. Pour on cauliflower you have par boiled and add more grated cheese.
Et voila!

That's how I made it last time. Maybe it's just one of those things I can't do Sad. I can make cheese sauce. I can make Macaroni cheese. Just not cauliflower cheese.
I'll try again though.

300ml milk
80g ish butter
80g ish flour

Chuck the above in a microwaveable bowl. Microwave for 1 min. Whisk. Micro for 1 more min. Whisk again. Repeat about 5 more times til the sauce is magically thick and lovely.

While it's microwaving, grate a fuckton of cheese, throw that in and mix. Voila cheese sauce.

RickOShay that’s the method, it’s the not getting bored or distracted on mn that makes it happen.

AND I par boil the cauli, leave it to drip dry in a sieve until cold before adding to the sauce.

For added amazing ness I cook some chopped bacon and stir that in and add slices of tomatoes with extra grated cheese on top before bunging in the oven.

Today can fuck off and when tomorrow gets here I’m making cauli cheese and Mac cheese and I’m not sharing with anyone but you lot Flowers

Actually that is quite odd. I do the same for macaroni cheese. Is it a cauliflower problem do you think?

Yep. Lovely and thick. Exactly how I make the for Macaroni cheese. Or anything that uses cheese sauce. Then after I baked it it was watery and sad. I left the cauliflower to dry for a few mins too.
I will not be beaten though and will try again!

Former try steaming the cauliflower instead of boiling. No lurking wet to ruin the sauce.

New steamer is on my Christmas list. Maybe that's the issue.
I really fancy cheese sauce now. On anything. or in a bowl on its own

Missing the point here but bbc good food has a fab really easy cauliflower cheese, I always manage to completely fuck up a cheese sauce but somehow manage to make this 1 perfect every time
This is the one I use. Made it today actually. Really easy 🙂

Compared to you guys I am a very lazy cook. This dish in our house: preboil the cauliflower about half way. Chuck it in an oven proof pan. Pour a cup of double cream on it, salt, pepper, nutmeg and grate shitloads of cheese. in the oven for 30-50 mins. Can't be bothered with the besamel sauce :) But I will try the microwave idea.

Skip the cauliflower; it's tastes like an old wet fart in a shoe. Use broccoli or macaroni!
