Recipes With Loads of Veg

I’m trying to eat more veg so I’m on the hunt for reasonably easy recipes with 3/4/5 portions of veg in.

I really struggle to get veg in at breakfast/lunch due to time constraints so trying to make up for it in the evening.

Does anyone have any good recipes they could share?

@PurpleDaisies - this is the recipe I use and they come out perfect every time. www.allrecipes.com/recipe/139948/jamaican-fried-dumplings/ make sure you adjust the serving size as its set for 6 people. And add the water a tiny bit at a time. Youll need less than you think, just enough till it all comes together. Also it says to fry for 3 minutes on each side which is far too long. I do about 30 seconds and keep flipping them till they're nice and golden brown.

For lunches make up some nice salads. Home made coleslaw, with a vinaigrette dressing if you don't want mayo, chopped salad (ezme) always a winner, small dice of cucumber/tomato/peppers/grilled peppers/celery/etc. Lemon juice/fresh herbs/olive oil.
Pizza with added veg? I sometimes do a big quantity of roast veg and add that. Or use it to make a lasagne.

Halloumi casserole- courgette, peppers, mushrooms, onion and halloumi. Fry off and add tinned tomatoes, garlic and paprika. Put in casserole dish and top with breadcrumbs and bake.

Also, veg coated in curry paste and roasted. Then add to pan with tinned tomatoes.
