These days I batch cook a huge pot of ragu (along with this this recipe but a bigger quantity), recuded quite thick, and freeze it in smallish portions. My "bolognese" is then a portion of the ragu with added tomatoes/passata and fresh vegetables and herbs.

formerbabe, as opposed to people using dolmio, you're quite right!
en.wikipedia.org/wiki/Bolognese_sauce Ingredients include a characteristic soffritto of onion, celery and carrot, different types of minced or finely chopped beef, often alongside small amounts of fatty pork. White wine, milk, and a small amount of tomato concentrate or tomatoes are added, and the dish is then gently simmered at length to produce a thick sauce.

There are variations and then there is calling any veg with any meat with pasta, bolognese Confused.

I used to make chilli without the beans and serve it with pasta but I would never have called it bolognese to anyone except my child.

Soften onion and garlic,
Add mince,
Add chopped courgette and mushrooms,
Salt, pepper, Worcestershire sauce, soy sauce and paprika,
Squidge of tomato puree and a tin of chopped tomatoes,
Simmer for 30 mins

The lactase in milk helps break down the meat. If you cook it for long enough you don't need it but it's a good trick if you aren't planning on cooking it for hours

Makes perfect sense, thank you. I use Quorn mince so that's passed me by but I do have a vague recollection of my grandmother adding milk now I think about it Smile

It does help to not let random Italian grandmothers wander into your kitchen. They can keep their peace of mind, and I can chuck together a sauce and pasta in whatever heathen way that pleases me.

Oh dear. In that case I'm sure I'll go to nonna hell for kitchen crimes for sure. I even snap my uncooked spaghetti in half before cooking it.

Can of ratatouille in the blender. Finely chopped celery, carrot and onion. Fry all chopped veg, add garlic puree and lots of black pepper. Add pureed ratatouille then Quorn mince. Spoonful of cream at the end.

I don't now but I used to and think the snapping is in memory of the very very long spaghetti wrapped in the blue paper. It must have been at least two feet long. Oh happy memories Smile

had a vegan come and stay the other week.

Fry onions, garlic, beef mince,carrots. add tomato purée ,tinned chopped tomatoes, mixed herbs, some beef stock and leave simmering for 20 minutes. Add a handful of porridge oats about 10 minutes before serving

@formerbabe sorry, been MN absent for a while. Just dried pasta (usually penne as it's easiest for my ADHDer to eat. Turn slow cooker up to high, lob in pasta for the last 40-45 mins.
