I need an EPIC lasagne recipe!

I’m in competition with a friend over lasagne. I need the best recipe ever!

Any recipe suggestions gratefully received!

High fat content beet and pork mince make a huge difference

Top the lasagne with mozzarella the actual fresh one

And the bottom of it mozzarella too the fresh one not block

Make your own white sauce

Use egg sheet lasagne so I recommend the marks and Spencer sheets or fresh Waitrose ones

I don't reccomend barilla they are too thick

Have thin layers not thick ones

White sauce on each layer x

I use pork and beef mince 20% fat. Fat=flavour

You can pump up your bechemel by simmering the milk you use for it with onion, bay and whole peppercorns.

Here (south Italy) we do:
Definitely pork and beef mince- the butcher's have packs of mixed meats especially for baked pasta dishes
A very small amount of soffritto, you'll never find chunks of anything.
No garlic
Passata not tinned toms- and less than you'd think. Lasagne is sliced and stands up. Add salt- more than you'd think. It takes the acid taste away from lots of tomato
Red wine once you've browned the mince
Cook the meat mixture for as long as you can
Bechamel with nutmeg
Layers pasta, meat+ bechamel (together) and mozzarella cubes
Top layer is usually a final meat+ bechamel mix (if you look at any real Italian brand of lasagne the box will show a picture with meat clearly visible, but I prefer just bechamel)
If the recipe says 100g cheese, double it. Etc.

I agree the St. Delia one is the best ever. The one if hers I followed had chicken liver in the ragu. Dd nearly left home when she found that out, but it is the best I've ever made.
