What's the best kitchen surface if you've very hard water?

We're replacing the kitchen Grin
Currently have a stone counter top, I don't think it's granite. It's dark and shows every water mark. I've used vinegar and anti-calc cleaner on it but it's destroyed the edges and never looks clean.

What should I be looking at to replace it with?

We have very hard water and put in a light quartz island, where the sink is - it's white, with light grey veining. It's very easy to clean, and you can only see limescale if you inspect it very closely, at just the right angle. I use some viakal every week or so and it comes straight off.
