A vegetarian What Have You Eaten Today thread!

I love these threads and I've recently gone vegetarian again, so thought it be fun to get some ideas Smile

Today, I've had:
B: porridge with blueberries and walnuts, small glass of orange juice

S: banana

L: pitta with hummus and falafel, and salad
An apple, and some plain yoghurt

D: creamy broccoli and mushroom pasta

Coffee, tea and water to drink all day.

Avocado on toast

Thai chilli quinoa with coconut milk, crispy fried shallots and broccoli

Baked eggs with Bubble and Squeak

Water and peppermint tea to drink+ 3 cups of coffee

Marmite on toast

Naan bread baked with houmous, pesto and broccoli (much nicer than it sounds)

Chinese fake away with spring rolls, rice stir fry veg, homemade sweet and sour sauce and “chicken” nuggets.

Doing 16:8 so no breakfast.

Lunch was chickpea salad with rocket, tomatoes, olives and grilled halloumi.

Dinner was roasted sweet potato, chilli and coconut soup with hot bread rolls.

Also had a slice of dd's homemade sponge cake and a few grapes.

trying to do 16:8 but was starving so fat free yogurt and frozen berries for breakfast (diet ice cream!),

same for dinner but with cacao nibs and 2 satsumas

tea was chickpea and spinach curry with a rogue courgette blended into the sauce (made it unexpectedly creamy!) and a spoonful of whole milk yogurt.

water to drink.

B- muesli with Greek yogurt and fruit
L- halloumi with avocado and tomatoes
D - Richmond vegan sausages, new potatoes and roasted veg

S - rowntrees fruit pastel lolly and a kit kat

Snacks: a flap Jack bite and a satsuma

Yesterday:
No breakfast unless copious amounts of coffee counts.

Lunch: entertaining so a mix of nibbles including pizza slice, halloumi, falafel (first go at falafel mix from Ocado spotted on here) hummus, veggies etc

Dinner: Picard spinach and goats cheese tartlet (Ocado gem) with Yoghurt dressed potato salad and coleslaw
