Savoury pancakes for sneaking in the veg?

I would like to encourage my son to eat more veg but he refuses point blank. I don't push it because I am hoping he will eat them as he gets older but would like to try sneaking them in occasionally.
Sneaking into pasta sauce doesn't work as he won't eat it. I managed to get carrots into mash (but it had to be enough he wouldn't notice so was maybe 1/3 of a carrot if that in his portion) and grated into pies or bolognese. I'd like to try pancakes. What veg is hideable and tasty in a savoury pancake?

Beetroot! Blitz up a fresh beetroot with some oats, an egg and a splash of milk. It’s a recipe from Wean in 15. Quite a few good ideas on their Instagram page.

Could you blitz some spinach in the pancake mix and say they are green hulk pancakes?

I could try but he is suspicious of things like that. He is almost 8 so not so easy to trick.

I make katsu sauce, loads of veg tastes like it's bad for you imo

Courgette pancakes. We love them. We cut the courgette finely so it is visible though. Presumably you could whizz it up to a puree in the food processor so he'd be none the wiser. They contain lots of vitamins.

Also try parsnip chips? Cut fine, oil and salt, in the oven. Really yummy and sweet, can't imagine he wouldn't like them!

I blitz spinach to make green pancakes and they taste the same.

Also I sometimes use half flour, half ready brek to up the nutrition. You do need to add extra milk though.

Does he eat pasta sauce at all? Boil up the carrots, spinach, tomatoes, peppers, onions etc in the tomato sauce then blitz it all before you add it to the line perhaps?

Agree with Katsu curry sauce bring a good one to blend veg into. In fact, most curry sauces.

Vegetable burgers? Spicy bean burgers?

Not a pancake tip, but grated courgette is easy to hide in rice as long as you peel the green part off completely.
