Help- courgette recipes please

Because a weeks total neglect means my 2 plants have gone into overdrive. Turns out the seed packet wasnt lying when it said 'reliable, heavy cropper' ffs. 9 of the things are ready to be picked and eaten. There were none on the plants when we went away last week because I picked all the baby ones before I went.

DH thinks he hates the things but doesnt notice if I chop them small enough. The kids will willingly eat them as well in small doses. However, if I attempt to serve up this many courgettes in a week I'll either put myself off them for life or the kids will mutiny.

I make a courgette keema with mince, onions, and garlic, a bit of tomato puree, curry powder, and 1-2 chopped courgettes.

This is going to sound weird but you can add grated courgette to porridge while its cooking. You can't taste the courgette especially by the time you add fruit or honey but it makes the porridge really creamy (and mildly green!) and adds a load of additional vitamins to it.

I also make stuffed courgettes. You can put virtually anything in them but our favourite is sausage and tomato. Scoop out the courgettes and put it in a frying pan with sausage meat, diced onions, garlic, and paprika then once it's nearly cooked add some chopped tomatoes and simmer down until it's thickened a bit. Fill the courgette shells back up, cover in cheese, and bake until bubbling.

I'm going to make these as I usually get a sweet potato in my veg box and have plenty of courgettes in the garden.
