Can i make a soup out of this?

I roasted up some sweet potato, but squash, courgette and peppers on Sunday ahead of the week. I'm a bit bored of having this now and was wondering if I could turn any of it in to soup? If so, how? I guess possibly just the sweet potato and but squash?

I do a butternut squash one and often chuck in sweet potato if I have any. Bit autumnal maybe for the moment. However, I just fry onion, add a bit of garlic and the squash, then cumin and some stock. Blitz when veg is cooked and thin with more stock if needed.

Any veg can be turned into soup. I would use all the veg, add some stock and blitz!
Or if you want some other suggestions, courgette and brie soup is great. Just puree the courgettes with some veg stock and olive oil, warm it up and melt brie into it just before serving.

Thanks both. Since I've already roasted it all and it has been in the fridge, should I heat up the veg in a pan with stock then blitz? I don't want it to go to waste but definitely won't eat it all.

Yep. Fry a bit of onion, add the veg, stock and simmer for 10-15minutes then blitz.

I would sweat off some onion, add garlic and cook for a little while, then add all the veg, stock, Worcestershire sauce and salt and pepper. Simmer for 5 minutes (as veg already cooked) then blitz.
