What can I make with 5 ripe bananas apart from banana bread?

They're sitting there in the fruit bowl looking at me. I have a nice banana bread recipe but fancy trying something different. Any suggestions?

With pleasure. I buy bananas just to have them for this pud.

4/5 ripe bananas (seriously ripe still work well, even the ones that you'd throw out normally).
2 tablespoons plain yogurt - low fat or full fat, it's up to you
1 teaspoon vanilla extract
75g soft margarine
100g caster sugar
2 medium eggs, beaten
175g self raising flour
0.5 teaspoon salt
2 tablespoons clear honey

Preheat oven to gas 4 / 180 degrees C

Mash 1 or 2 bananas (2 small or 1 larger) and mix with the yogurt and vanilla extract.

In a different bowl, cream margarine and sugar till light and fluffy then beat in the eggs, a little at a time. Mix might curdle a little if you go to fast but don't panic if it does, it makes no difference.

Fold in the flour, salt and banana/yogurt mixture and mix thoroughly.
Slice remaining bananas and lay over the base of a flat bottomed dish - I use a ceramic square lasagne dish. Drizzle over the 2tbsp honey and then splodge on the sponge mix and smooth it out.

Shove in oven for about 45 mins till golden brown on top and springy when gently pressed.

I serve straight from the dish with more plain yogurt on the side. Enjoy!

Possible stupid question BigGee - can you use butter instead of margarine? Baking novice here!

I don't see why not! I've been told that margarine makes a lighter sponge than butter, but its entirely up to you and what you have. It was from a weight watchers recipe book so its designed to be lower fat.

Banana and prawn curry. Don't think 'ugh' - it's hands down the best thing I've ever eaten (DH made it). It doesn't taste banana-y, it's a general sweetness and even the pieces of banana in the curry taste less like banana (in a good way). Thoroughly recommended!

Do try it @Lottapianos! Looking again at the ingredients, DH just used normal onions (no shallots here), and we wouldn't have had any lime juice or white wine open to splash in but it is still always amazing when he makes it. :)

Baked Bananas:

Cut lengthwise in half
Put in ovenproof dish - cut side up.
A few small nobs of butter and a good sprinkle of brown sugar.

Bake for 30mins (approx)

Serve with icecream/custard/cream.

Delicious and so simple.
