What exciting dinner can I make with cocktail sausages?

I usually do mini toad in the holes but it just feels like the wrong time of year. So if anyone has any inspiring recipes I would be very grateful. Thank you.

I had cocktail sausages last night! I only had 6 left so sliced thinly and added to a wee tin of tomato and basil soup with a poached egg dropped in at the end and crusty toast.
Cleared some space in the fridge and cupboard and was delish.
Maybe not much use to you for feeding a family.

Coat them in sticky honey/soy marinade and cook them in the oven, serve with sticky rice and steamed veg.

What about the Nigella recipe with roasted peppers and halloumi ? Just with cocktail sausages instead of chipolatas . You’d probably need to chop the halloumi smaller but it could work

Do you mean little sausages, or hot dog sausages?

For little, normal sausages I'd recommend a sausage casserole and for hot dog sausages, I make a mean stew - a bit like a Welsh cawl, but with hot dog sausages. The kids love it.

The sky is grey here. Toad in the hole is fine. One of the few benefits of an English summer.

Or you could do potato salad with chopped up sausages if you wanted something more summery

I thread them on skewers with chicken, cherry tomatoes, peppers and red onion then cook on the bbq

Chop them in half & put in a tomato sauce for sausage pasta. I often whizz other veg into the sauce to make it healthier, too.

Use them as part of a Russian salad, for a quick lunch.

Add to thick pea, bean, or lentil soup.

Chop up and fry with some onions & garlic, add passatta and heat through for a quick pasta sauce.

Heat chickpeas or butter beans, add sausages, garlic and passatta, heat through and serve with garlic bread.

Make a Boston beans style dish and add the sausages to them. A home made but much nicer version of baked beans and sausages.

Tray bake. Cook them up in a oven dish with some wedges of potato, quartered onions and whatever other veg you have. Half way through cooking pour over a can of chopped tomatoes, a good squirt of barbecue sauce and if you like heat some sriracha sauce. The beauty is it’s all in one so you don’t need anything else to go with it.

@LizzieMacQueen I will often chuck a bit of five spice in too, give them some more flavour. Not all cocktail sausages are equal, and sometimes they need the help.

Sausage, tomato and soft cheese pasta or in the oven covered in honey and whole grain mustard to have with chips/mash and veg/beans. DD is a big fan of a cocktail sausage dinner Grin

Some fabulous ideas here thanks everyone. I back and forthed on the toad in the hole but the sun’s appeared and all of a sudden it’s roasting!
