Does anyone have a good panzanella recipe?

I really fancy having a go at one but not sure where to find the best recipe to use. Anyone?

A loaf of coarse granary bread torn into chunks
A number of very ripe tomatoes cut into chunks
A cucumber peeled and cut into chunks
4 cloves of garlic sliced thinly
A combination of - tuna from a can, chopped anchovies, roasted peppers from a jar, a ton of olives, torn up mozzarella, basil leaves.

Then a large amount of seasoned olive oil and red white vinegar well shaken up, and poured all over. Toss it all about in the bowl and refridgerate for a few hours.

we eat this with sliced and sauted new potatoes. It is the food of the gods.

How funny, I made this yesterday for the first time using this recipe. I served it with a cucumber and vinegar salad and halloumi.

(I just used a normal pepper. Maybe not write the range but it was fine. Had the leftovers for lunch.)

I’ve made it with white bread and tinned tomatoes on occasion. And it was still good
