What are you all having for lunch? I know it's quite early but I always having lunch with my 3yo Grin
This is mine, couldn't really decide what I wanted.

Halloumi is delicious isn't it. I love the stuff.

Sometimes I give DD the same as what I'm having but it depends. DS has ASD so only has a few select lunches. I'm also vegetarian so DD occasionally has ham, chicken or leftovers. We are the same with all having the same meal (DS is offered but only eats the potato bit) so lunch is the one I meal I can have whatever I want Grin

I am now (stocks very low) down to melon and cottage cheese or cheese and crackers or soup.
If I don’t go shopping today it’s going to get grim here ! Can’t face it.

Thick toasted slice of sourdough with local griddled tomatoes and another duck egg. Feel like I won't need to eat for the rest of the day now 😂

Homemade mackerel pate with melba toasts, it was lush and nice to have something different than I’d normally have.

I skipped breakfast and had humous with veggie crudités to dip, plus some rice cakes. I'm saving room for our pre-ordered Chinese takeaway at 6pm!

Just an apple. Have a good breakfast (muesli, bran flakes, loads of chopped fruit and natural yoghurt) so try to keep lunch to a minimum or some of us oldies can get fat very quickly.Sad

I'm doing keto so I had baby kale salad, chopped radishes, a little cheese some cucumber and just a little bit of prawn cocktail. Didn't get a pic because I scoffed it too quick.

Lunch today was lovely! No photo though!

Walnut bread with broad bean hummus, feta and a drizzle of balsamic; some grapes, and a slice of roasted vegetable pizza. Carb heavy but very yummy!

@TwentyViginti Sorry, I just saw you wanted the recipe now. Here it is:

Large knob of butter and a splash of olive oil
1 onion, roughly chopped
2 cloves of garlic, roughly chopped
1 large carrot, grated
1 courgette, grated
4 tablespoons tomato purée
1 tin tomatoes
2 stock cubes (chicken or veg)
1.5-2 litres water
1 tablespoon sugar

Sauté the onion in the butter and olive oil until transparent. Add garlic, courgette and carrot and sauté until it goes mushy. Add tomato paste and cook off until it starts to catch. Add tinned tomatoes, stock and water. Simmer for about half an hour (this is key!), then blend and season. This should make 4-6 servings.

The quantities can be messed around with a fair bit and it still tastes good. I often throw in some chilli flakes/paprika/basil or serve with by pouring over some chopped up mozzarella with goes all lovely and melty. You don't need the sugar but it makes it taste more 'Heinz-y' and I have successfully got it past a number of people who are veg haters!
