Curry with coconut milk - can I freeze it?

Sorry - dull question alert..

Thinking of making veg and chickpea curry with korma paste and a tin of coconut milk. Can I freeze the leftovers or will it split and go manky?

Any advice would be appreciated - thank you!

Yes. Why wouldn't you?
I made coconut ice cream, sweet potato and coconut soup, curries with coconut etc. Its all fine to freeze.

I expect it is no different from freezing Thai red / green curry which has a fair amount of coconut milk in. Although it's called milk because it's a creamy white liquid, it beats no relation to actual milk and I freeze it regularly with no bad effect. In many ways it tastes even better as freezing food slightly breaks down the structure of the meat and vegetables and so the flavours soak in further.

Ace, thanks all!

@Weregoingonanadventure - I was just worried that the fat from the milk might split, but apparently not Smile
