Aloo Gorbi recipe anyone?

I've go t a lovely one but it's cooked in yoghurt so different to the ones you get in Indian restaurants. It's by Ismail Merchant.

Here is a classic punjabi recipe:

Put chopped onions in a pan with 2tbls of oil
Add chopped ginger
Add cumin seeds (if you have some)
When onions are brown:
Add some tomatoes - can be plum, chopped or fresh (peel skin off if using fresh)
Add salt, turmeric, garam masala and chillies
Now add cauliflower florets and potato pieces.
Cook on medium heat for 20-30 mins
Garnish with coriander

remus I’m going to try your recipe, it looks lovely. Currently I’ve only got mango yogurt in so think it’ll be after the next supermarket trip on Wednesday. Will post pictures.

I tend to use more yoghurt and more spices. It's really delicious. Needs something bright and crunchy alongside: I usually just do diced cucumber and red onion, with a bit of lemon juice and mint sauce mixed in.

Ooh, thanks for the tip. I’m really enjoying trying out new recipes at the moment. Aloo Gobi is one of the things I always order and it’s slightly ridiculous that I’ve never tried making it!

@TimeForCableTies I tend to just roast them and eat them with whichever dal I’ve got in the freezer.

This is really nice made with sweet potato...but strictly Indian though.

Coincidently I’ve just seen a recipe for root veg tikki (I’ve got root veg mash to use up) which has sweet potatoes in it. I haven’t tried it though.

Cable - you could use the sweet potatoes in any curry, really. Either roast them and stir in at the end, or cut into chunks and add just after the onions.

Curry paste or spices, maybe some coconut milk. Red lentils would be nice with it.
