Lockdown has got me baking! Yesterday I made honey and almond biscuits and have plans for my first ever attempt at a carrot cake. I'm getting really into icing as well at the moment - I always used to do buttercream but now I'm testing out making royal icing from scratch.

Tell me about your lockdown bakes!

Also where has all the yeast for baking bread gone???

I don't have a photo but have been making cheese and chorizo scones a lot recently, from the BBC Good Food website. The recipe says manchego but cheddar still works perfectly well!

Last week for a change I did cheese, mixed herb, and garlic scones (scones are the one thing I know will turn out well everything!) which were ok but not quite as much of a hit with DC.

I've not tried making cheese scones, I usually bake sweet rather than savoury but you've inspired me!

I'm planning on doing some biscuits (I suck at biscuits so want to try again), something with pastry (haven't made pastry in years), and probably cake of some sort because it's just a bad time of the month to be on lockdown and have no chocolate. Grin

ChocolateDove I feel you! I love a good chocolate cake, though mine always turns out a bit too dry. Have to say I am blitzing my way through the Easter eggs though 😂

I have been practicing icing my biscuits with royal icing, but I've never done it before so it didn't turn out as hoped. I need to practice!

Dd and I made profiteroles with an almond milk creme patisserie, and a pavlova base. Neither would have won prizes for looks, but first time we'd made either so I was pleased.

What recipe did you use?

I just did Mary Berry's lemon meringue pie and it was amazing! Never made meringue before and it's been fun experimenting.
