I want to learn how to cook fancy

Inspired my Masterchef ofc.

I'd class myself as a pretty decent home cook. But I want to learn how to make cheffy stuff.

Can anyone recommend a website or a book? I want to make things en veloute or with a crumb etc

The Cordon Bleu courses are amazing and not horrifically expensive. I’ve done a few and my cooking is so so much better
