Sausage Mediterranean bake - sausages (chilli or honey ones work especially well) peppers, red onion, tomatoes, courgette, garlic, roasted together with chopped chilli and maple syrup. Can add potato's in as well, or serve with rice, chips or bread. Yum

I’m veggie so my sausages are veggie but even so:

Sausage and mash

Toad in the hole

Pasta with sausage and veg in tomato sauce

Sausage sandwich - but very specifically made. Brown off outside of sausages in fry pan, then remove and cut lengthways BUT don’t cut right through (you’re sort of “spatchcocking” them) then fry the now exposed surfaces of the inside of the sausages it goes lovely and crispy and makes it easy to pop them in a sandwich. Meanwhile, butter your bread (or rolls), place cooked sausages on bread, top with sauce or even better onion or sweet corn relish, complete sandwich...devour!

Sausage casserole -

“How would you do a sausage casserole, what else would you add?”

Brown off sausages in frying pan, put in casserole dish, cover with baked beans - sometimes I’ll go “fancy” and have these:

Add a little stock

Cook for 1 hour at 200°c

Then sprinkle over the top sage & onion stuffing mix (trust me) and cook another 10-15 mins.

The liquid soaked into the stuffing mix but you basically get a quick and easy herb crust on your casserole.

Sausages out the skin, broken up, fried with onions, carrot and celery, garlic and tomato puree (all finely chopped). Then add pasata and chopped tomatoes, a bit of stock and a few sprinkles of fennel seeds. Cook for 20 minutes or so.

Serve with your favourite pasta. I like rigatoni with mine. All mixed through of course, if you want to do it the authentic Italian way Wink

Sainsbury's mag creamy polenta with roasted Italian sausages. I use any flavoured sausages and chestnut mushrooms though.

Sausages in cassoulet, you need a couple of different types for interest.
Sausages with cauliflower cheese, or broccoli cheese.
Sausages with fried tomatoes and plenty of bread for dipping.
Sausage sandwiches, hot or cold, lots of mustard!
Sausages with mustard mash or colcannon.
Sausages in pease or bean soup.
Sausages with pease pudding.

Tray bake.
Root veg chopped into largish chunks (red onion, potato, sweet potato, parsnip) in a tray, with sausages op top. Bit of olive oil, bit of balsamic vinegar. Could add red pepper, cherry tomato and rosemary unless you are feeding my children in which case don’t bother as they will refuse to eat it.
Bung in oven, cook until sausages are done. Serve with some green veg.

Sometimes big tomatoes and perhaps onions

There probably ought to be a green vegetable in there but I don't know what really suits.

Sausage, mash, veg & gravy

Chicken sausages:
Sausage, sweet potato & sourdough bake
Sausage, chips & gravy

Sausage stew:
Slice and fry a large onion.
Sausages cut into about four pieces, add to pan and fry for a moment.
Stir in a spoonful of flour, some garlic, some paprika
Add a tin of chopped tomatoes, swill with water, add the water.
Add a stock cube.
Simmer the whole lot for about an hour, checking that it doesn't stick and burn.
Serve with rice, and a green vegetable if you're feeling virtuous.
