I had a few very over ripe bananas so have made two cakes. Can I freeze one do you think? Tia

Yes definitely I always do (actually I make it in muffin cases so freeze for snacks for kids)

I like to slice it and wrap each slice in clingfilm to freeze. That way the slices can be used one at a time. They work perfectly taken straight out of the freezer into a lunchbox - by midday they are perfectly defrosted.

Yes, I also slice and freeze in 2 slice portions. Perfect to take out if Dh and I fancy a slice or if someone is coming around. In slices it defrosts quickly.

coconutelegraph Grin you've made me laugh! Also made me realise that yes, my first instinct is to consult mumsnet not Google....I can't decide whether that's worrying or not! Thanks for the replies folks
