Recipes for fussy eaters

DS(8) was/is a picky eater but is slowly wanting to try new foods and flavours. Could anyone in a similar situation share some simple recipes?

Also, what he still does not like at all is mixed textures.
Would it be too bad it I blended veg in sauces?

My DD, at a similar age, used to love fried steak in a baguette. She would even eat fried onions with it!
With veg, she started with uncooked carrot batons. Then peas. Cooked peas, although as a prelude she would eat uncooked frozen peas straight from the freezer. Then cooked carrots.

At that age I put small bowls with tomato, lettuce, carrot, cucumber, capsicum, cheese, mushrooms, rice etc on a lazy sussan. The had to try at least 3 things.
