I think I've ruined my curry :(

I mis-read the jar of curry paste & have put in 300ml of cream instead of 150ml I wasn't concentrating properly.

Anyone know any fairly quick ways to rescue it? :)

Just add some more curry paste if you have some and cook it a bit longer

Ah, erm, no I don't. It was the last of the jar :( I've been looking forward to it since Saturday too.

Add a few other spices - a mix of cumin, coriander, tumeric, little bit of cinnamon and a hefty whack of chilli powder. Fry off for a couple of minutes first in a separate pan, then mix in.

A bit of cornflour to thicken it up? Just simmer it a bit longer to reduce down? Or accept it will be a bit sloppy. I'm sure it will still be perfectly edible.

Do you have any curry powder you could add in along with some extra spices? Maybe some chopped tomatoes drained and onions, peppers?
