Cheap, healthy, comforting and easy meals for January please

All the cheese, crackers and Christmas/new year foods have left me feeling sluggish and unhealthy. I want to sort things out.

Could I have some easy recipes that will up our veg intake but that are also easy to do and comforting to eat to get through the January lows please?

Baked sweet potato with humous (whizz up drained tin of chickpeas, garlic, lemon and olive oil in a food processor, put in fridge till needed)

Spinach with spaghetti. Lots of garlic fried in olive oil with diced onion. Add in loads of spinach once they’re nice and soft. Add pine nuts (optional) and mix in cooked spaghetti. Little bit of grated Parmesan. Simple, cheap and healthy and very satisfying.

Tomato, red pepper and lentil soup. Fry (Large, diced) onion till soft. Add diced red peppers (2). When cooked add two tins of chopped tomatoes, bring to boil and simmer. Whizz up till smooth with hand blender. Can add lentils or butter beans for protein and to make it more of a meal. Serve with bread of choice.

Lentil dhal and rice. Make it more liquidy for a soup, serve with a poached egg on top.
Mixed veg tray bake - seasonal veg, potatoes etc in wedges, chuck in some protein (quorn sausage, normal sausage, bacon, eggs in ramekins) at the appropriate time from the end of cooking.
