Food plan for a family trying to go meat free?

want to move to a minimal meat/ no red meat diet but struggle to find a full weeks menu of tasty meals. Would anyone be willing to share a sample menu for their week? I've tried veggie lasagne, chilli and like quorn but struggle beyond 2 or 3 meals. Still want to keep fish in our diet. Both DH and I work, 3 hungry DC so needs to be family friendly too. Any ideas?

Roasted Mediterranean veg fritata
Falafel in pita with salads
Stilton stuffed mushrooms
Carrot and kidney bean burgers (jack Monroe recipe)
Shakshuka
Stir fry with rice noodles, garlic, chilli and spring onion sauce with cashews
Home made pizza
Red pepper and BNS curry with spiced, dry roasted cauli
Veggie sausages or toad in the hole with mash carrots and broccoli
Veggie shepherds pie with sweet potato mash
Vegetable and chickpea tagine with cous cous
Pea and leak risotto

I also like things like dhal or veggie curries. Savoury pancakes, halloumi wraps, mac and cheese
