I've the Sainsburys 3 nut and mushroom roast for my Christmas dinner BUT it's just for me and it's rather a lot!

Use by date 30 dec

If cooked Christmas Day will it be ok to eat Boxing Day and possibly 27th too? Trying to avoid too much waste

Freezer currently out of commission (needs a clean and sort out can't face it right now)

It's not actually my first choice I ended up with a substitution in my delivery so I'm feeling a bit thrown

I have to say it looks really nice (I opened box to see if I could maybe cut it and cook half Xmas day half another day but it would be a shame to do that to be honest)

This years Christmas is not going to plan - no roast potatoes (I bloody forgot!) and no yorkies (originally ordered nut roast served in a large yorkie) but I do have this, roast parsnips, stuffing, cranberry sauce, and I'll have instant mash (I like instant mash just not quite as much as roast potatoes)

I'll be fine.
