Can I peel carrots and parsnips tonight?

Will they be ok for Christmas day? I'm at work tomorrow so I'm trying to get ahead with the prep a bit

I think they’d go brown ! Though unsure how the supermarket package ones don’t, maybe peel and freeze :)

I think you could if you leave them submerged in cold water and left them in the fridge.

Bit early for that I’d say, not really worth the cock up if it goes wrong. How many are you cooking for? Even if it’s 10 carrots and parsnips it’s not a long job.

I've done this loads of times. Peel and chop, then submerge in cold water as said above. I either put a plate on top of a bowl or use tupperware with a lid to reduce any oxidation of the top floating bits and put in the fridge. I change the water if leaving it longer than overnight, though

I peel and chop them and put them into sandwich:freezer bags with a tablespoon of water then store them in the fridge
