HELP... lot’s of visitors, need meal ideas!

We live in a hot country, this year we have lots of people staying over , one after the other pretty much. All good but sometimes I will be working!

I need meal ideas to please all, maybe some that I can prep before I leave in the morning and won’t take too long or not to complicated so DP can help.

I like the idea of things in the middle, help yourself style.

Roast, wraps and a salad.

I would get a large piece of meat beef lamb or pork cook it then spilt it between
Meat & three veg,
Meat salad new / jacket spud
Curry
Wraps ,
If you are having a big gathering do a pot luck supper ( where everyone brings something )

Noone can bring anything, they are all staying for 2-3 weeks at our house! So no pot luck Sad

Good ideas though!

Any side dishes everyone likes??

Pulled/shredded ham hock with baked potatoes, warm bread rolls, grated cheese, apple sauce, tomato chutney, caramelised onions and a green salad.

I would suggest if they are staying for more than a few nights that they put there hand in there pocket and share the cost of a take a way or meal out .

Rice salad ( great for using up any random bits of wrinkly veg )

(more ) chips

The only type of side dish I do not like is cold pasta salad ( blurgh )

Two big pots of curry/ chicken tikka masala and vegetable tikka masala. Rice, sides.

Big pot of chilli, rice, tortilla chips, guacamole.

Two big lasagnes, green salad, loads of garlic bread.

Two woks, cook up mass batch of fajita mix (chicken, onions, carrots I'm very thin batons, red and yellow peppers) serve with tortilla wraps, salad, grated cheese/sour cream/tomato salsa.

Cook a big joint of beef- hot beef sandwiches with onions in malt vinegar.

Yes we don’t like to ask people for money and feel the need to feed everyone to lol. Maybe people will treat us as a thanks but I don’t expect to be fairSmile

Curry and rice. Tarka Dahl, naans etc

Lasagne, garlic bread and salad.

Casserole, mash and veggies.

Fajitas and spicy rice

Pulled pork, baps, salad, bbq sauce. If you use a nice big pork joint, then mix any leftover pork and bbq sauce in an oven dish next day or a couple of days later, with various beans (kidney, butter and haricot work well), peppers, jalapeños, spinach, mushrooms, cover in loads of cheese and cook in the oven, to get a nice second meal out of it. I prefer it to pulled pork. Delicious with crusty bread and salad.
