Urgently need an AMAZING carrot cake recipe

I need to produce a fantastic carrot cake for this evening and feeling harassed when googling recipes. Tried looking for a Nigella one but can only find an alternative one with ginger and while I love ginger cake, this isn't to be gingery.

Can anyone help with a lovely carrot cake recipe?

The Hummingbird bakery one is lovely.

1.5 cups oil
2cups sugar
4 eggs well beaten
2cups flour
1tsp salt
2tsp cinnamon
2tsp baking soda
2tsp baking powder
1cup broken pecans/walnuts
3cups finely grated carrot

Mix oil and sugar and beat well, add eggs and blend. Sift dry ingredients 2/3 times. Add nuts to dry ingredients and blend thoroughly with other mixture. Add carrots bit by bit and blend well. Turn into 3 paper lined cake tins bake in 180C oven for one hour

Icing
100g margarine
300g Philadelphia soft cheese
75g icing sugar
Mix and spread between layers and on cake

omg my mum made the most spectacular carrot cake a month or two ago. it was honestly outrageous. can't remember where it came from though i'll ask her.

If you make their cream cheese frosting then use half the sugar that they recommend. It is unbelievably sweet otherwise.

What recipes are people following for the Hummingbird? is it a video one - does anyone know where there's a text one I can print out?

Many thanks all, it turned out well! I did as suggested and used half the sugar for the frosting and it was perfect.
