Ideas for a filling vegetarian dish that everyone will enjoy.

I am hosting for lots of people next week one of them is a vegetarian. The others all love their meat. I am doing a hot buffet , including two roasted meats and one dish will be a vegetarian chilli. I dont want the veggie guest to be restricted to just this. He does not like pulses, Tofu, nut roasts or curry.

Please inspire me with a hot dish that everyone would enjoy.

Gnocchi bake (with tomatoes and lots of cheese) or a potatoes dauphinois or Boulanger If you want to spare the calories!

Look up Greek Briam ('My Little Expat Kitchen' has a good recipe).
This is amazing. Bought a portion from a little vegetarian café on its first day of opening and have been pursuing that taste through recipes ever since. Though it's vegetable, it is not diet food and requires a lot of olive oil. It will probably be popular with everybody.
The key to whether a recipe is any good is whether it will describe the layering to you; the different veg cook and soak up sauce at different rates, so it does matter.

Vegetarian lasagne - so much better than meat lasagne. With green salad and garlic bread.

Macaroni cheese or a vegetable lasagne might be good but TBH with his list of requirements I think I'd just give him one choice and not worry too much about if the 4th option meets his restricted diet, ie, a mild curry veggie or not

I would second mushroom stroganoff. It’s delicious and mushrooms are also quite “meaty” in texture so good for meat-eaters.

There’s a YouTube channel called Dimitra‘s dishes and on there is a delicious veggie stuffed pepper that I like more than my favourite meat one.

Hungarian stuffed peppers, substitute the meat for Quorn or soya of some kind. I use chopped up Quorn slices or cut up the fake chicken pieces.

If you want the recipe let me know, mine is not the same as the ones on Google, or wasn't last time I looked.

Thank you, brilliant ideas here. Can I cook the mushroom stroganoff then previous day and reheat it?

I don’t really want to give every one else a large choice of food and just one thing for him. I think the meat eaters will eat the stroganoff , chilli and the lasagne.

Another vote for Briam. it sounds like 'how can it be that good, the ingredients are a bit meh' and then you make it and it's amazing.

If you want to go as far as buying a cookbook, then Anna Jones.

DH and I are not vegetarian DH definitely not and anything Anna Jones has been a hit.

I usually do a spinach and ricotta canalloni (sp?) everyone likes it can make in advance then cool
Through on day- looks a bit special and is very tasty.

I’m vegetarian. If I was served vegetarian chilli I would like some rice or a potato to go with it and then I’d be really happy to see some sour cream, guacamole and grated cheese to go with it. Oh and maybe some salad too.

Gnocchi bake with rich tomato sauce, olives, garlic, bresh basil and thyme and lots of mozarrella.

Or baked brie studded with garlic and rosemary, served with garlic bread.

Or a roast pepper and goats' cheese quiche.
