Family vegetarian meals for fussy kids

Trying to be more veggie for the environment etc but really struggling to find vegetarian meal ideas for two fussy children and one fussy husband. Would you be willing to share your family's favourite veggie meals for inspiration? I'm a bit stuck on spag bol with Quorn, Mac cheese, and pitta breads and falafels, hummus etc.

Me too!! Toad in the hole with Quorn sausages works pretty well in our house

Our favourites:-

I do spinach and chickpea curry. Only a small amount of mild curry powder, no chillies and HOARDS of Greek yoghurt mixed in for the kids. I add lime chutney for me to add some heat. I also bribe the kids with naan bread - they get a piece, and then more once they've had a good amount of curry.

Quiche - cheese and tomato - is a popular one, but I find I can hide lots in a quiche. They've been known to eat stilton and broccoli quite happily!

Chickpea burgers - again, the kids get natural yoghurt to go with them, adults get sweet chilli sauce.

Leek tart - fry leeks till soft, add half a block of Lancashire cheese and two eggs, spread on a puff pastry sheet and bake for 40 mins. Again, I've added grated courgette, leftover broccoli and the kids don't notice.

Stuffed peppers - stuffed with veg, cous cous and feta.

Fajitas with almost no spice, various fillings like cheese and sweet corn in bowls so everyone can make their own.
Roast dinner with ready made mini roasties, Yorkshires etc and lots of roast veg, gravy, mint/cranberry sauce, maybe stuffing balls - no need to 'replace' the slice of meat.
Linda McCartney sausage rolls with potatoes, broccoli etc

There's also a BBC recipe for sweet potato, goat's cheese and red onion tart which is really loved by my youngest.

Lots of different risotto recipes. My kids liked the tomato one and I've also made ones with other veg.

Quorn southern fried bites are amazing.

Veggie pizza
Pasta with tomato sauce
We sometimes do a great lasagne with 3 cheeses but no meat
Cheese quesadillas
Fried egg, chips and beans. Or an omelette.
Baked potatoes with bean chilli or baked beans, or cheese
Halloumi burgers
Cheesy polenta with tomato sauce

We’re not veggies but my kids would eat all of these.

Shroom dogs from Sainsbury’s are the best non meat sausages. We have them in sandwiches for Saturday breakfast, as bangers and mash, and chopped up with pasta and a spicy tomato sauce. They’d work in toad in the hole too.

BBC good food is really good for ideas.

What do you normally eat? Maybe people could suggest how to do veggie versions.

Try 'Cauldron' brand sausages. They have 2 flavours, both taste good. (Cumberland and...) We have tried many vegetarian sausages and these are the only nice ones in our families opinion!

Sorry I'm going to throw in another veggie sausage suggestion-Richmond meat free!

My DS doesn't like the texture of mushroom or pea protein ones, and Quorn is so farty! ( I still eat and like them in sausage casserole though)

Stir fry noodles. You can tailor to the veg your kids will eat (often not much more than peas carrots and sweet corn in my house but sometimes I get away with mange tout or edamame etc). Honey, garlic, ginger, soy sauce. You can also buy frozen gzoya including veggie ones - pan fried as a side they are really nice

Broccoli pasta bake
Spinach tart (but they only eat it if it has bacon cubes in it!)
Pasta and tomato sauce
Pumpkin soup
Veg soup
Cheese pie
Pasta & aubergine/peppers/tomatoes

Linda McCartney sausages in all the normal recipes, toad in the hole, sausage casserole etc.

Cheese and potatoe pie, loaded potatoes with various toppings, jacket potatoes.

Fajitas, chilli con carne, lasagna etc with vege mince. Lasagna with layered veg instead of meat.

Mushrooms or peppers stuffed with cheese. Quiche.

Pasta and noodles with all the regular sauces, just use veg instead of meat. And a range of extra cheese for protein!

Lentil stew and rice/cous cous
Risotto - we like butternut squash and feta or goats cheese and peas
Roast dinner with all the veg, cauliflower cheese and veggie gravy and veggie stuffing balls goes down well here
Veggie fajitas
Cauliflower and chick pea curry
Roast veg lasagne
Vegetable pie and mash
Veggie tortellini, sauce and garlic bread
