One week of annual leave

Sorry for being thick, but if I take a weeks holiday from work, Monday-Sunday and normally work Mon-Fri does it count as 5 days annual leave or 7days?

If I get 28 days per year including the bank hols does this mean I can take 4 weeks?

Yep annual leave is usually just counted as working days so in your scenario above that would be 5 days leave. And yes, if you have the statutory minimum entitlement of 20 days bookable holiday plus 8 days bank holiday, that equates to 4 weeks off (plus bank holidays)...

A week is your working week so 5 days leave.

Five days - it is the days you are taking off work that count, not your own weekends

if your workplace shuts the 8 public holidays you have 20 days left so effectively 4 weeks free choice, if you work public holidays you would be able to take that day some other time
obviously legally your workplace can tell you when you have your holiday if it wants, or indeed have rules like you can't be off when someone else is or certain busy weeks when you can't be off or only so many weeks can be in school holidays etc
There is no legal right to free choice holidays
