Butter and brown sugar on a roast chicken

Never had that before but had it yesterday at a friends for lunch a full on Christmas style roast with pigs in blankets
Brussels with bacon lovely roast potatoes

I imagine it’s just lashings of softened butter massaged all over the chicken and then some sugar sprinkled on top (if there was a crunchy caramelised quality). Otherwise some butter and sugar mixed together.
Exact quantities don’t matter, just make it up as you go along!

I would cook the chicken for half an hour first and then add the butter and sugar, otherwise you risk it burning by the time the chicken is done.

There is a Caribbean recipe called 'brown stew chicken' which starts off by caramelising sugar in oil, which you use to coat the meat before stewing.
It tastes amazing.

Some cooks put butter under the skin, could they have done that, but with the sugar beaten into the butter before whacking it on/in?

Your friend sounds embarrassing OP how tragic- hardly a 'recipe' is it and she hardly made it up either Confused people can be so strange. - Half a cup softened/half melted butter, quarter cup of brown sugar combined - rub it all over (under the skin as well if you can be botheted, sea salt and pepper it and cook as normal.
