If it exists anyway...

Includes Australia and US (Oz more important then US)
Can call uk from their using minutes/data in plan
Can also call other numbers in the country you're currently in.

Either I’m reading them wrong or nothing seems to cover all 3!

I think EE covers the US.

And Aus.

3 mobile.
Although calling the US/Aus numbers is expensive.

One other possibility to consider: a good UK deal for the States, combined with a duel SIM phone with an Aus and UK SIM permanently in there. I suggest this combination as I think US PAYG doesn't really exist.mim not sure about in Aus.

I did look at Three but it seemed to say you can’t use your data/minutes to call (for example) an Australian number if you’re in Australia. Although maybe I’m just being a bit daft!

I'd agree with that - it costs to call local numbers when abroad.
Hence the duel SIM solution. The second only needs to be PAYG for calling local numbers.
