Gluten Free, Vegan, Nut free, Coconut free cake. Is it possible?

Oh please help me everything has almond or coconut when looking online

Person it is for is the sweetest person ever and really deserves to eat actual cake for once but they are allergic to

nuts
coconut
egg
milk
wheat

Yes, it’s possible! I make Pippa Kendricks brownies which are egg, wheat and dairy free - they use gluten free flour not coconut - you could leave the nuts out to make them nut free too. She’s got a great book called The Intolerant Gourmet I use all the time.

are you looking for a recipe? if so, try this one. its measured in cups, so you will need to convert it, and replace every cup of almond flour with 3/4 cups of chickpea flour x

I find banana cake quite successful when cooking for vegan or gluten free friends- I think the banana helps counter some of the problems you can sometimes get when using gluten free flour and vegan fats.

I just adapt my usual banana cake recipe but use vegan egg replacer (from Holland & Barret) and either rape seed oil or vegan margarine instead of butter. To make it gluten free just use a guten free flour (check there's no almond for your friend).

If you use half and half white and light brown sugar it gives it a nice caramelly flavour.

Delia's black forest gateux made with chickpea water instead of egg whites? Cocoa powder is normally gluten free but check nothing else has been added. You would need a non-coconut based vegan cream, the vegan kind does some. You can make vegan meringues with the chickpea water too.

The BBC vegan lemon cake has been recommended here on MN and looks very nice. You'd need to substitute the flour, however. Dove's Farm flour is gluten-free and doesn't include nuts or coconut.

Yes! I once made a chickpea Blondie with vegan chocolate chips and it was delicious (as anything would be with that amount of sugar in it!).
