Does anyone have a gluten free shortbread recipe they know works?

I've saved a Doves Farm one to try out, but it says 45mins to cook. Is that right??

We're hoping to do some quick-ish cooking with our Guides towards Christmas but 45mins to bake biscuits might make it a no-go.

You'd be better doing cookies or gingerbread men/other shapes as they arent cooked in a block and then cut like shortbread would be

We were half thinking of doing those stained glass 'window' biscuits @dementedpixie. I don't think they'd work well with cookies.

@FenellaMaxwell do you have a recipe you use? I'm not an experienced GF baker so would prefer something simple. (I will find time to test run first with my own girls though!)

225g butter
100g icing sugar
225g flour / gf flour
100g cornflour

Bake at 140C for 30-40 mins

I cook a lot. I'm also coeliac. Shortbread really doesn't work as it's so flour heavy! Sorry, it tastes like dust

Agree, gf shortbread is not good, unless you use lots of ground almonds and presumably nuts are a no go? Does it need to be biscuits? Banana bread or muffins work well (moist), and cornflake or crispy cakes with gf cornflakes/gf rice krispies are quick. Gf flapjack is perfect as you just need gf oats, and otherwise is identical!

@Tanqui yes, nuts are a no go for someone else.

I'll have a read of the recipe link above in a minute when I've tucked dd2 up.

@dementedpixie the timings of that look much more achievable for everyone to have a go! Thank you so much.

Have you tried it yourself? I wonder if we could skip the almond extract (a different girl is severely allergic to nuts) without it affecting the taste too much.

To get around the dust issue I always add juice of a lemon and a tonne of lemon zest to gf shortbread. Makes it really nice and also the dough is then wetter which helps as gf baking needs additional moisture to avoid being too dry.
