How to recreate Wagamama ramen at home?!

I have a craving for their ramen.

All the recipes I can find online involve a lot of ingredients I don’t have, like seaweed, or seem to just involve a stock cube, which doesn’t sound very appetising. Is there no middle ground?! Does anyone successfully recreate them at home?? I can get to Sainsburys for ingredients.

Yes, we have a wagamama recipe book from about 30 years ago. You need stuff like soy, mirin and sake for the chicken marinade, and I usually add misu paste to the chicken stock soup. But then we chuck in what we have to hand - mushrooms, sweetcorn, spinach, bamboo shoots, whatever. Noodles too of course. It's surprisingly easy and apart from the chicken you don't need much of anything.

Yes good stock is the essence of good ramen. Buy (or make) the liquid stuff not a stock cube if you can.

Here is a recipe I have successfully used to create something like their ginger chicken udon but does have a few more eccentric ingredients.
