Disneyland Paris - help - my head is hurting (lots)

OK - complete newbie to the world of Disneyland and completely bamboozled by all the choice and complexities. Am about to book Newport Bay or the Sequoia Lodge (can't decide) and planning get a half board plus meal plan but confused about choice. Any thoughts about hotel??

So travelling with DH and DS (age 6) and I'm vegetarian - other two aren't. What are the best options for us - buffet? Table service? Any particular restaurants worth visiting ? We were planning to go for dinners rather than lunch but then I've just realised you need to book breakfasts too, so is it worth going elsewhere for breakfast other than your hotel? I can't find menus online either

So any thoughts, tips or ideas? There's loads of DLP forums but a lot of the info is quite old and I trust MN to be a better source of advice given that I'm travelling with a young child.

Oh and favourite in park restaurant is the one for pirates of the Caribbean. Dd is veggie and choice was pretty limited eg in the buffet in the Disney village area the only veggie food at the place I had prebooked (carefully stating vegetarian) was chips, mash potatoes or rice, plus salad. They had put ham in the egg dish even - we were pay as you go and they waved the charge for her meal after I spoke to the manager.

Really surprised at all the love for the Wild West Show.

We hated it - so boring and the food wasn't great.

We went earlier this year, half board at Newport Bay, was worth it as the characters come to the hotel so little queues and little one got to see lots of characters. Breakfast is good, nice hotel after a busy day.

DS has just announced he is not interested in meeting the characters. Bet he doesn't say that when he's there

We stayed at NPB its absolutely stunning and over looks the lake. Slightly further than SQL but only by a few mins. Id pick NPB. Im also vegetarian. We dined at Agrabah a couple of evenings and i absolutely stuffed my face. Lots to choose from. The buffet at the hotel is good too. We dined back at the hotel 2 evenings. Esel of Sandwich just inside the Disney village does veggie sandwichs for a quick lunch. Theres also a pizza place inside the main park which do cheese and tomato pizza. Im not 100% sure all cheese in DLP is vegetarian but i did have the pizza before i even thought about this 🤦‍♀️ Agrabah do pasta, hummus,pitta bread, rice, potatos, cous cous etc

The veggie option at the dining with the princess place is gross. Luke warm pasta with big cold mushrooms. I left it and just had pumpkin soup

Breakfast at NPB is great for vegetarians (although no veggie sausages) they do cereal, yogurts, eggs, breads, spreads, toast, potato fritter things which are lovely, beans etc lots to choose from
